We love entertaining.There’s nothing quite like having friends or soon-to-be more than acquaintances over to our house for great food, lively fellowship and lots of laughs.
It kind of makes the whole “clean up this mess!” all worth while.
Knowing me, though, I’d like to spend more time on enjoying the food than making it.Don’t get me wrong: I want it to be excellent food, but I’d rather spend more time on the back end, talking with our friends rather than have them talk to my back while I’m going through preparations.
It’s so much easier to look others in the eyes when you’re facing them, don’t you think?
I could use my “mom eyes” that are in the back of my head, but somehow that wouldn’t give the right feeling to the whole conversation…
So to make the most of my time, I like to whip up easy dishes that leave more for the gabbing and less for the cooking, while still making my guests wish to be invited again.I can easily get that effect when I make Italian Dressing Pork Medallions.
The really great part about this dish is that is just as good baked in the oven as it is grilled on the grill.Pick your season to determine whether or not you want the heat in the kitchen.
(Since it’s almost summertime, I’m going the grilling route.That way I can get even more talk time by asking that Mr. Right do the grilling as that is really a part of a man’s world.J)
Italian Dressing Pork Tenderloin
2 8-ounce pork tenderloins
3/4 cup Wish-Bone® Robusto Italian dressing
1 teaspoon Worcestershire sauce
Place all ingredients in a resealable bag. Toss to coat tenderloins and place in the refrigerator for at least 30 minutes but no longer than overnight. Preheat grill.
Remove tenderloins from bag and grill over a hot fire. Total cooking time should be about 15 minutes. Turn occasionally to prevent burning. Remove when done; the meat should be firm but not hard to the touch. Slice into small disks or medallions.
Serve this entrée with a mandarin orange salad, corn on the cob and a nice cool Chardonnay, and that’s what I call a great meal!
The only way to make it better would be to finish it off with my strawberry pie and a rousing game of Pictionary or cards… guests’ choice.
