It’s hard being a working mother, especially as an Executive Administrative Assistant.Not only do I have to take care of everyone at home, I find myself taking care of everyone at work too.There are times when I find myself taking care of everyone around me without giving a thought to myself..
Sometimes momma needs a little down time and loving for herself.
One of the ways that I’m not afraid to pamper myself is with my lunches.I don’t eat out often because – holy moly! You can feed third world country on the amount that people spend on dining out!So I find ways to spoil myself on the less expensive side of life, when I have an hour to myself, feeding my body with scrumptious victuals and nourishing my mind with yet another book.
The good part is that I’ve trained most everyone to leave me alone in the breakroom while I’m on my lunch hour and reading, except when I’m eating something really delectable like the following recipe. Sigh… it’s the price of being so good to myself.J
So if you want to have people stop and comment on your next lunch or if you’re looking for a really effortless dinner for the family, try making Roast Beef Sandwiches with Blue Cheese Dressing.It’s really delicious, inexpensive and a change from the normal fare that you might set on the dinner table… or in our case the table on the back deck.It’s a perfect summer food to have with potato salad and fruit.
Roast Beef Sandwiches with Blue Cheese Dressing
1 loaf crusty sour dough or whole wheat bread, cut into sixteen 1/4-inch-thick slices
2 tablespoons (1/4 stick) butter, room temperature
1 1/2 pounds thinly sliced rare roast beef
1 7.25-ounce jar roasted red peppers, drained, sliced (optional)
Arugula or leaf lettuce
Wish-Bone® Blue Cheese dressing
Salt and pepper
Spread 8 bread slices with butter. Spread remaining 8 bread slices with Wish-Bone® Blue Cheese dressing; mound beef atop dressing, dividing equally. Sprinkle with salt and pepper. Top with peppers, if desired, then arugula and buttered bread slices. Cut sandwiches in half. (Can be made 6 hours ahead. Wrap in foil and refrigerate.)
Ahhh… being the mom certainly has its perks!
